Chai (tea)



First heat water (not boil)
Then add the rest and simmer on a low heat 10-15 min (crush the last 4 in a mortar if so desired)

7 Cups water
1/4" ginger root, sliced thin
1/4 tsp nutmeg
1/8 tsp fennel or anise seed
1/2 tsp cardamom pods
1/2 tsp cloves
1/4 Tsp cinnamon (2 sticks are better)
1/2 tsp black pepper corns

Add, then simmer low low heat 10 minutes:
3 1/2 Tbsp tea (black or darjeeling)
2 1/2 Tbsp honey

strain this mixture, then add:
1 cup milk

and that's pretty close to how I like it.
